Introduction
Today, individuals as well as organizations share the duty to protect the environment and the
Earth. Algonquin College (AC) has its sustainability goals across three pillars: social, economic
and environmental. The environmental goals are further based on three aims: reducing ecological
footprint, facilitating debate on environmental issues, and restoring and regenerating the
environment ("Environmental Goals", 2017). As an established college, Algonquin has 21,059
full-time students, nearly 38,766 continuing education registrations and 1290 full-time
employees served by 9 food courts across its campuses ("Fast Facts", 2017). These cafeterias and
food courts use plastic cutlery on a regular basis. Short term convenience pushes us to use
disposable cutlery that we throw them away without paying attention to how it is impacting
our environment. Plastic cutlery is cheap, light weight and popular worldwide. For these reasons,
many people do not really think about the environmental impact plastic cutlery has. Plastic
cutlery takes up a lot of landfill space and energy in its production. In addition, it uses a lot of oil
for manufacturing and is responsible for oil spills in water and land ("Plastic Cutlery", n.d.).We
can recycle plastic, but it is not biodegradable. The majority of plastic is not recycled after use.
In fact, only 6% of all plastic waste is recycled in the US ("Plastic Cutlery", n.d.). To collect data
for this report, our group has used a relevant websites and the AC library website. We have
inquired at every food location of AC to find out about their plastic cutlery usage.
According to our research these are the amounts of plastic cutlery used by AC on daily basis at
these locations: • Tim Hortons - 750/day
• Bits ‘n Bytes - 150/day
• The Fix Eatery - 500/day
• The Portable Feast – 600/day
• Market Place Food Court – 2,000/day
• 35th Street Market Café- 100/day
• Booster Juice- zero/day
• Restaurant International and Savoir Fare- 110/day
• Starbucks and The Observatory- 10/day + 200/day
Please see APPENDIX A for more information about plastic cutlery used on a daily and yearlybasis at AC food locations.

2 Our group would like to replace the plastic cutlery with edible cutlery to aid the college with itssustainability goals. In India there is a company named Bakey’s Edible Cutlery that manufacturesedible cutlery.
Benefits of using Edible Cutlery
Using edible cutlery has many benefits as shown below:
• “Plant based eating utensils” (Olewitz, 2016) are made from safe, edible ingredients.
Even babies can eat them or use them as teethers. They have a shelf life of more than 18
months, and they are naturally compostable.
• The main ingredient in edible cutlery is sorghum, which is gluten free and very high in
micro nutrients ("Edible cutlery", n.d.).
• It comes in three different flavours and flour choices (wheat, rice and sorghum): plain
(like water), sweet (like an ice cream cone) and savoury (like a cracker) (Shapiro, 2017)
("Edible cutlery", n.d.). To see the ingredients in the flavoured versions, please refer to
Appendix B.

• There are no preservatives and chemicals used. Edible cutlery does not include any
“artificial colours, raising agents, fat, trans fat, artificial chemical nutrition or animal
ingredients, milk or milk products” ("Edible cutlery", n.d.). • To make it strong, hard and crisp, it is baked at a high temperature. It is strong enough to
handle hot soup ("Edible cutlery", n.d.). • The manufacturing process used for edible cutlery is very sustainable. It uses less water
and emits less carbon dioxide than the manufacturing process used for disposable utensils
(ClickPress, 2016). • It is 100% natural, biodegradable, vegetarian and vegan (Munir, n.d.).
Along with the benefits listed above, edible cutlery is nutritious and compares favourably to the
use of plastic.
